Kitchen display or printer? What works at the pass

Every kitchen we walk into has an opinion about this, and it is usually the right one for that kitchen. The mistake is assuming the answer is universal.

When a printer is still the right call

Paper works. It is cheap, it is instant, and it does not go dark when a chef with wet hands touches it.

A printer suits you if:

  • Your covers are steady rather than spiky
  • Tickets get spiked and forgotten, not re-read
  • The pass is short and one person controls it
  • Your kitchen is wet, hot or cramped enough that a screen is a liability

When a screen earns its place

A kitchen display starts paying back when the kitchen has to re-read orders — when the same ticket matters at three different moments.

It suits you if:

  • You run courses and need fire timings held and released
  • Multiple sections cook parts of the same order
  • You want to see how long a ticket has been open, per section
  • You are running delivery alongside dine-in and the tickets arrive from four places

The real gain is not the paper saved. It is that nothing gets lost when the printer runs out mid-service and nobody notices for ten minutes.

The thing nobody mentions

A screen only helps if your menu is built properly. Courses, modifiers and prep stations have to be right in the system or the display just shows you the same mess faster.

We have taken screens out of kitchens before. If the menu underneath is wrong, paper is more forgiving.

What most sites end up with

Both. A display at the pass for timing and a printer on the hot section for tickets that need to physically travel. That is not a compromise — for a lot of kitchens it is the correct answer.
